Nothing says game day like a rave-worthy queso dip! This smoky, spicy, savory queso dip makes the experience even better with the addition of our Hot Ones Los Calientes hot sauce, made with smoked serranos and habaneros.

Ingredients

  • 1 block (16 oz) processed cheese (like Velveeta), cut into cubes
  • 4 oz Oaxacan cheese, shredded or diced
  • 1 can (12 oz) evaporated milk
  • 1/4 cup whole milk (or more, to thin)
  • 1 can (10 oz) Rotel (diced tomatoes and green chilies, undrained)
  • 1 can (4 oz) chopped green chilies, undrained
  • 1/2 cup Hot Ones Los Calientes Verde hot sauce (add more to taste)
  • Tortilla chips for dipping

Instructions

  1. In a medium saucepan or a small slow cooker, combine the cubed processed cheese, shredded Oaxacan cheese, and evaporated milk.
  2. Heat over low heat, stirring frequently, until both the processed cheese and Oaxacan cheese are completely melted and the mixture is smooth. If using a slow cooker, this may take 10-15 minutes on the low setting.
  3. If the dip is too thick, gradually stir in the whole milk until it reaches your desired, thinner consistency.
  4. Stir in the Rotel, chopped green chilies, and the initial amount of Los Calientes Verde hot sauce.
  5. Continue to stir and heat for 1-2 minutes. 
  6. Taste the dip and gradually stir in more Los Calientes Verde hot sauce until it has your preferred level of heat and flavor.
  7. Transfer to a serving bowl or keep warm in the slow cooker. Serve immediately with tortilla chips.
